Cucumber Salad
2 cups thinly sliced Japanese cucumbers
1 teaspoon salt
1 tablespoon sugar
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
2 teaspoons sesame seeds
If Japanese cucumbers are not available, English cucumbers can be substituted. The English cucumbers need to be peeled, cut lengthwise, seeded and sliced into thin half moons. In a large bowl, combine cucumbers and salt and mix well. Add sugar, soy sauce, rice wine vinegar and sesame oil and mix well. Sprinkle with sesame seeds and mix. Let marinate for 20 minutes before serving. Adjust seasonings before serving.

Cucumber-Dill Salad
1 seedless European cucumber, or 2 American cucumbers
3 tablespoons cider or white vinegar
1 tablespoon sugar
salt and freshly ground black pepper
1 small red onion, sliced and broken into rings
3 tablespoons finely chopped fresh dill
Wash the cucumber(s) and partially remove the peel in lengthwise strips using a vegetable peeler or fork and leaving a little skin between each strip. Thinly slice the cucumber widthwise. Place the vinegar, sugar, salt, and pepper in a bowl and whisk until the sugar is dissolved. Add the cucumber, onion, and dill, and toss well. The salad can be served at once, but it will improve in flavor if you let the ingredients marinate for 5 minutes.
Cucumbers with Yogurt-Dill Sauce
1 cup plain yogurt
2 tablespoons mayonnaise or salad dressing
2 teaspoons lemon juice
1 teaspoon chopped fresh dill weed or 1/4 teaspoon dried dill weed
Salt and pepper to taste
1 garlic clove, finely chopped
2 large cucumbers, thinly sliced, (3 cups)
1/4 cup thinly sliced red onion
1. Mix all ingredients except cucumbers and onion in large bowl. Stir in cucumbers and onion.
2. Cover and refrigerate 30 minutes to blend flavors.
Cucumber, Fennel, And Orange Salad With Pomegranate Seeds
2 hothouse cucumbers, peeled and thinly sliced
1 large fennel bulb, trimmed and thinly sliced
1 small red onion, halved and thinly sliced
2 large naval oranges, zest and pith removed, halved and thinly sliced
2 bunches watercress or 8 ounces young spinach leaves
3 tablespoons sherry vinegar
2 tablespoons fresh orange juice
1 tablespoon honey
1/2 cup olive oil
1 cup pomegranate seeds
1/2 cup toasted pine nuts
Directions:
Combine cucumbers, fennel, onion, oranges and watercress in large shallow bowl. Whisk together vinegar, orange juice, honey and olive oil.
Toss with salad.
Sprinkle with pomegranate seeds and pine nuts.
Cucumber Salad
4 cucumbers, peeled
1 teaspoon salt
1 teaspoon sugar
1 tablespoon rice wine vinegar
1 clove garlic, minced
4 tablespoons soy sauce
1 tablespoon sesame oil
Few drops Tabasco sauce
Slice cucumbers lengthwise. Sprinkle salt on cut sides, then place cut-side down on paper towels to drain. After 30 minutes, pat dry.
Slice cucumbers into 1/2 inch pieces. Place in a large bowl. In a small bowl, combine the remaining ingredients. Sprinkle on cucumbers and toss to coat. Let sit for 1 hour before serving.

my grandma made this recipe all the time, unfortunately there are no exact amounts it is done by taste. (old school I guess)
cucumbers and sour cream
3 cuke's peeled and sliced thin
1 small red onion sliced thin
1 small green paper sliced thin
place in a bowl and add 1 tbsp. salt and mix well, this is going to wilt the vegee's. after about 15 minutes place in a colander and rinse off the salt. place back in bowl.
add: equal amounts of sugar and apple cider vinegar (ex. 3/4 c sugar and 3/4 c. vinegar) taste it...if you like it sweeter add more sugar. also add 2 tsp dill weed...now this part is optional....add I cup sour cream and mix thoroughly it will froth up a bit but not to worry. that's all there is to it.

Peel and slice cucumbers
I like a little onion in mine also
Mix about a cup of sour cream, a little splash of vinegar, a dash of salt and a little sugar.
Add to cucumbers and you're done.
