Hooooeeeee!

A nice thin slurry of cayenne pepper, butter and a little olive oil is my secret! Inject the breast, thighs and legs generously, but make as few entry holes as you can. This prevents leakage of the precious juices.

Before this, brine your bird in a salt/sugar solution that tastes like the ocean with just a touch of sweetness for 8-10 hours (more is NOT better).

Under the skin, slip just a little of the injecting 'liquor'. Take it easy, because when it hits the hot oil, a little will generate steam and allow the skin to crisp, a lot will make for a bad boilover.

Use a thermometer in one thigh, and save me a piece!

I inject the turkey with Cajun Butter (found at your local grocery store) and then rub parsely / butter / tony chachers or slap ya mamma seasoning (my personal favorite...my ex brother in law produces it) mixture over the top of it right before dropping in!

you have to inject it,, we first soak it over night,use a salt brine with a bottle of wine, cup of salt, water to cover, then add some bay leaves, chopped basil, pepper corns, garlic cloves, chopped up onions,


then before frying I like to inject butter and herbs ground up so they squirt through the needle and inject it into the breasts,

1/2 cup kosher salt
3 tablespoons onion powder
3 tablespoons black pepper
3 tablespoons white pepper
2 tablespoons sweet basil
2 teaspoons ground bay leaves
