You may take this comments into consideration:
If you write as a single person:
- describe what you did (adopted a unit to write to)
- describe your intentions why you write (are you thankful ? Why ?)
- describe who you are and a little about your daily life
Imagine that this letter will be read in front of a group or by a single person. Imagine in what situation they are and what you want them to tell to support them. They may feel lonely, they maybe scared, they may be bored, ....
I think it is essential that your are honest and sincere. You may never know who read this letter and what reactions you created but you may read this letter in some days/weeks/month and still agree with the content..
I think it is essential that the soldiers know that here are people who think, feel and care about them.
Personally I would not discuss politics, would write "human being" to "human being".

RE:
What should I write to a soldier? Any suggestions?
Where I work we have adopted a unit in Iraq to write to. I really want to write something but don't know what. Any suggestions? Do they really just want to hear how thankful I am for what they are doing? I imagine there would be more it.

Just thank them and, contrary to previous answers, leave out the political garbage. You could write about a lot of things, it just depends on what you are into. Maybe start with a little about who you are, why you are writing, and then about normal things like someone already suggested. Find out where the unit is from and maybe talk about things that are happening in their local area.

Tell them how we all are thankful for them and their protection. I am, at least.
Then talk about how your day went, the weather back home, your family and if your married or have kids, your friends and what your week end plans might be.
I think just hearing about normal everyday things from home (the U.S. in general), would make them a little happier and let them know that even though our lives here go on pretty much like normal, that they are by no means forgotten.

We always enjoy hearing a simple "thank you." It makes our sacrifices easier to cope with when we know that we are not forgotten. Its also nice to hear a little bit about you and your daily life because it reminds us of what "real life" is like.
