the chicken breast is white meat and the drumstick is dark meat...the breast may seem drier than the drumstick because the bones actually make the difference...there aren't really bones in the breast but there are in the drumstick!

A drum stick is from the dark meat section of the chicken same as the thigh, the breast and wing are white meat. The texture is that the legs work more than the breast so has a tougher textured meat.

The dark meat has more myogoblin in it because these parts of the body are used much more. The myogoblin helps transport oxygen. That is why they are darker and the texture is different from white meat.

Its like eating different cuts of any meat. The more the meat (muscle) is used the tougher the meat. Hence the texture will be different. More stringy/chewy.

that is because dark meat tissue is more compact, the breasts are usually hormoned to death in the feed to make the chicken put on weight fast, to market quickly,
