Usually embassies do not take care of administration of visa, it is their consulate that deal with that in most countries. I don't know in which country and region you are located so the list of consulates might be a bit long. Do a google search for China consulate and the name of your country to find the China embassy and consulate website nearest to you. Application forms and procedures to obtain a visa, as well as the addresses of the consular office for your area, are on the website. See the websites below for more information.

That depends where you are now and what part of China you want to visit. As a UK passport holder you can enter Hong Kong picking up a visa at the airport.
