Coconut Chutney Recipe
Coconut Grated 1 cup
Red Chillies(dry) 2 nos
mustard seeds 1 tsp
urad dal 2 tsp
tamarind dry 1 small piece
salt to taste
sugar 1 tsp
hing 1 tsp
oil 1 tbsp
Grate the Coconuts.In a pan heat the oil & add 1 tsp of urad dal, &chilliies.Fry for a minute.Let it cool completely . Add the tamarind,sugar,hing &
coconut & grind it to a fine paste . DO the seasoning with
the other tsp of urad dal , mustard seeds in a tsp of oil.

Chutney is a relish usually served with meat. Almost all chutney has a base of onions, vinegar, spices and fruits.
This recipe is WONDERFUL! ( and fairly easy) and doesn't make too much to use up at one or two meals.
Cranberry Chutney
4 cups (serving size: 1/4 cup)
1 cup chopped Granny Smith apple
1 cup raisins
1 cup onion, chopped
1 cup sugar
1 cup white vinegar
3/4 cup celery, chopped
3/4 cup water
2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon ground cloves
One (12 ounce) bag fresh or frozen cranberries
Combine all ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 30 minutes or until slightly thick, stirring occasionally. Serve with turkey, chicken, roast pork, or ham.
NOTE:
Refrigerate remaining chutney.

Fruit Chutney
2lbs green apples
2lbs tomatoes
1lb each of brown sugar, onions, dates, pears and peaches
1lb candied peel
1/4lb salt
1oz garlic
3ozs ground ginger
1tsp cayenne
1oz chillies
1oz cloves (remove blossom end as it will discolour chutney)
1 quart vinegar
Method
Chop finely, add spices, etc. Boil in the vinegar for one hour
Pineapple Relish
1 cup chopped pineapple
2 tbsps chopped spring onions
1/4 tsp salt
1tbsp chopped mint
Mix all together and serve with cold meat or poultry

Apple Chutney:
1/4 cup red currant jam
3 tablespoons cider vinegar
1 tablespoon unsalted butter
2 teaspoons minced peeled fresh ginger
1/2 teaspoon kosher salt
1 teaspoon Madras curry powder
1 cinnamon stick
Pinch red pepper flakes
1/4 red onion, large dice
3 soft cooking apples, like a McIntosh, peeled, seeded, and diced
2 tablespoons dried cranberries
2 tablespoons chopped fresh cilantro leaves
In microwave-safe bowl stir together the jam, vinegar, butter, ginger, salt, curry powder, cinnamon stick, pepper flakes, and onion. Cover with plastic wrap and cook in the microwave oven on full power for 2 minutes. Carefully remove the cover, add the apples and cranberries, and stir to lightly coat the fruit with the flavorings. Re-cover, and microwave at full power for 10 minutes. Poke holes in the plastic wrapping and set aside for 10 minutes. Stir in the cilantro.

I have absolutely no idea what chutney is, but if you go to www.allrecipes.com you can search it. There has never been a recipe I could not find on there. Good Luck
