How to Make Vanilla Ice Cream

No eggs in this quick and easy vanilla ice cream recipe means it's less rich than others - and still tastes great! Makes about 5 cups.

Things You'll Need

* 3/4 c. sugar
* 2 c. half-and-half
* 2 c. heavy cream
* 1 tbsp. vanilla extract

Instructions

* STEP 1: Combine the heavy cream and the half-and-half in a large bowl.
* STEP 2: Gradually whisk in the sugar until blended.
* STEP 3: Whisk in the vanilla.
* STEP 4: Cover bowl with plastic wrap and refrigerate at least 3 hours or until very cold.
* STEP 5: Whisk the mixture and then pour into the canister of an ice cream maker.
* STEP 6: Freeze according to manufacturer's directions.
* STEP 7: Transfer ice cream to a covered container and freeze up to 8 hours, or simply eat immediately.

Tips & Warnings

4 eggs, separated
1/4 cup caster sugar
1/4 cup caster sugar (not a misprint)
1 tsp vanilla essence
300 ml cream

Method
Beat egg whites untill stiff peaks form. Gradually beat in the first measure of sugar, 1 tablespoon at a time, beating until sugar dissolves before adding the next tablespoon. In a separate bowl, beat egg yolks and second measure of sugar until thick and pale. Add vanilla. Gently fold yolk mixture into egg white mixture. In another bowl, beat creamuntil thick and then fold into egg mixture. Pour mixture into a shallow container suitable for freezing. Freeze for 2 hours or until firm.

Variations

Any of the following can be added after the cream

1 cup chocolate chips
1 cup chopped nuts
1 cup pureed berry fruit - e.g. strawberries, raspberries
