In general, balsamic vinegar is a replacement for wine in various dishes. So you don't replace the replacement. But if you really want, you can use ordinary vinegar or you can go back using wine

Combine 1 cup red wine, and 2 tablespoons red wine vinegar.
Add 2 tablespoons sugar and boil till reduced to 1/2 cup.
Bottle and store - use as a substitute for balsamic vinegar. It may not be the real McCoy, but if you use really good ingredients it's a heck of a lot better, and still cheaper, than dodgy balsamic.

Nothing can, as it's such a unique taste, and you can use white wine boiled down to a reduction and add some red wine vinegar to that reduction..........And balsamic can be expensive, but you can get a very good bottle of it at the better stocked grocery stores and you don't have to pay an arm and a leg for it.........a little balsamic goes a long way..........but delicious in a viniagarette for salads

Nothing replaces the taste of balsamic vinegar. If it is for a salad dressing, wine vinegar makes a decent dressing in the same quantities, but not the same tatse or look.

How about a little spoiled wine?

It really depends on what you are cooking and what you like eating. Perhaps a little red or white wine or even their vinegars.

If you really want to take a left turn, try cooking with Mirin, Shoyu, a bit of sugar or Sake! You can even make a stock with Shiitake (or matsutake if you are willing to shell out the big bucks) or Katsuo.

Ordinary vinegar, in smaller quantities. But it's not as good.
