UNCLE STEVE’S WORLD FAMOUS PINTO BEANS
4 cups pinto beans, picked over and rinsed
3 beef bouillon cubes
1/2 pound thick-cut bacon, cut into ½ inch pieces
1 large onion, quartered
4 cloves garlic, pressed through a garlic press
1 tablespoon chili powder
1 tablespoon brown sugar
1/2 tablespoon freshly ground black pepper
5 packets Taco Bell® mild sauce
Place beans, onion and bouillon cubes in a large pot with a tight-fitting cover and add enough water to cover beans by about 2 inches. Bring to a boil over high heat. Meanwhile, place bacon in a medium frying pan and sauté until the fat is translucent, while stirring over medium heat. Add crushed garlic to the bacon, remove from heat and stir for about 30 seconds then add mixture to the beans. Reduce heat and simmer until beans are soft, about 3 to 3 ½ hours total cooking time, adding more hot water if needed. Add chili powder, sugar, pepper and Taco Bell® Sauce. Simmer for another 10 minutes and then serve.

Ingredients:
1 cup of cooked pinto beans
2 eggs
2 cups sugar
1 cup margarine
1 Tblsp. vanilla
pecans optional
Cook beans till soft no seasoning.
In a bowl mash the beans very well. In another bowl beat eggs and sugar.
Add melted margarine and vanilla. Add mashed beans to mixture.
Pour into a 9 inch unbaked pie shell.
Bake 45-50 minutes at 350 degrees.
This recipe was given to me by a 90 year old grandmother from New Braunfels, Texas. Her family is German and very creative with pinto beans. Enjoy!

1 cup dark corn syrup
1 cup white sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
3 egg, beaten
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C.)
In a large bowl, combine beans, corn syrup, sugar, cornstarch and vanilla. Beat in the eggs. Pour into pie crust.
Bake in the preheated oven for 30 minutes, or until filling is set and crust is golden brown.

PINTO BEAN PIE 2
INGREDIENTS
1 cup white sugar
2/3 cup packed brown sugar
3 eggs
1/3 cup butter
1 cup pinto beans, cooked and mashed
1/3 cup chopped walnuts
1 recipe pastry for a 9 inch single crust pie
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Cream together butter, sugars and eggs (slightly beaten). Add beans and nuts, mix well and pour into unbaked pie shell.
Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.
PINTO BEAN PIE 2
INGREDIENTS
1 teaspoon cornmeal
1 (9 inch) unbaked pie crust
2 eggs
1 1/2 cups white sugar
1/2 cup butter
1 teaspoon vanilla extract
1/2 cup pinto beans, drained
1/2 cup pecan halves
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C.) Sprinkle 1 teaspoon of cornmeal in pie crust and set aside.
Beat eggs in a large bowl. Beat in sugar, butter, vanilla and pinto beans. Pour filling into pie shell. Place pecans decoratively on top of pie.
Bake in the preheated oven for 60 minutes, or until golden brown and filling is set.
