Appetizers are the best way to gather your crowd together when they are just starting to arrive. It is a great way for guests to interact with each other.

One of my all time favorite appetizer is the Creamy Crab Dip.

and TRUST ME! It will get almost ANYONE hooked! It is also simple and easy to make

Ingredients:
1/2 Cup of Mayonnaise
1/2 Cup of Sour Cream
6 Oz. Shredded Crab Meat (you can find packaged ones in the tuna/canned seafood aisle)
1 teaspoon of dried dill / dill weed
1 tablespoon of Green onion
1 teaspoon of lemon zest
Table Water Crackers

Mix all the ingredients together in a bowl with a spoon. You can add a little more green onion on top to make a nice presentation. Serve with Crackers.

Baked lemon chicken. Slice 2 lemons fairly thin and prepare a whole chicken (cleaned and washed), first squeezing the juice of both over the chicken, and then using your finger seperate the skin over the breast and placing the slices of lemon underneath the skin. Also placing the same lemon slices in the cavity of the chicken and baking it at 375, 20 minutes per pound. Last pound cooking should be based with garlic butter and guess what, more lemon pepper, blast last 20 minutes at 450 remove and let rest and enjoy!!

If you want a drink recipe that is non-alcoholic: rainbow sherbert and 7-up make a great punch.

If you want an appitizer: green onion ham rolls are awesome and easy.
INGREDIENTS
1 pound thinly sliced cooked ham
3 (8 ounce) packages cream cheese, softened
2 (8 ounce) packages shredded Cheddar cheese
1 bunch green onions
DIRECTIONS
In a medium microwave safe bowl, mix cream cheese and Cheddar cheese. Microwave on high heat approximately 45 seconds, stirring frequently until melted and smooth.
Lay ham slices flat, and spread with cheese mixture. Place one green onion parallel to one edge of each ham slice. Tightly roll the ham slices into thin logs around the green onions.
Slice the logs into 1/4 to 1/3 inch wide rings. Arrange rings flat on a large serving platter. Cover and chill until serving.

PEASANT CAVIAR

Serve this well chilled as a first course or as part of a hors d’oeuvres selection, with crispy dry toast or hot triangles of pita bread.

2 small eggplants, about 2 lbs in all
4 garlic cloves, or more, peeled and slivered
salt and freshly ground black pepper, to taste
1 teaspoon soy sauce
4 tablespoons best quality olive oil
1 medium-size tomato, peeled, seeded and chopped
1/4 cup golden raisins
1/4 cup toasted pine nuts
chopped fresh Italian parsley

Cut the eggplants lengthwise into halves and make several deep slits in the flesh; be careful not to pierce the skin. Insert the garlic slivers in to the cuts. Lightly sprinkle the cut surfaces with salt, and place halves on a baking sheet. Bake in a preheated 350 degrees oven for one hour.

Remove eggplants, cool slightly, and invert on paper towels. As the eggplants finish cooling, squeeze them gently to eliminate any excess liquid. Scrape the eggplant flesh and the cooked garlic out of the skins into a small mixing bowl and mash with a fork.

Season to taste with salt and pepper, stir in the soy sauce, olive oil, chopped tomato, and raisins; cover and refrigerate overnight.

Just before serving, stir the peasant caviar well, taste, and correct seasoning. Stir in pine nuts and sprinkle generously with chopped fresh parsley. Serve immediately.

2 cups, 4 portions as a first course
