Such a loaded question. Fish can be cooked so many ways.

This is how my French Mother-in Law makes whole fish. In France you leave the head on the fish and you decorate it; but I realize Americans don't like to see the fish head.

Take a whole big white fine textured fish like snapper or pompano or flounder or whatever your fish monger suggests - you asked the fish monger to clean, scale and gut. You can have him take the head off if you wish but take it home because the fish head makes a great broth for the future.

If you do not have a fish pan; Line a baking pan with aluminum foil.

Rub fish with butter or olive oil inside and out, salt and pepper inside and out, place fish on a bed of lemon slices and onion slices; inside place a bunch of fresh fennel, some lemon slices, some onion slices and pats of butter. Outside place more lemon slices, onion slices and butter pats. Pour some dry white wine over the fish (about half a cup) cover the fish with foil and bake at 400 degrees for about 20 mins. uncover fish and bast with another half cup of white wine, cover and back another 15 or 20 mins. Serve with white wine sauce or hollandaise sauce: scrumptious

There are many ways to cook a fish, you can poach it in a frying pan with water, milk, butter, you can grill it, you can microwave it, you can bake it, but the best and easiest is to wrap it in silver foil and place in oven for 10 mins. So easy.

Somepeople put butter and seasoning in with the fish in the foil.
