The answer is not that black and white but it is also not very complicated - it depends on the varietal of red wine. Big, tannic Syrahs and Cabernet's will help reduce bitterness of old blue cheeses as well as the acidity of sharp aged Cheddars. But these wines will over power the flavor a milder cheeses. You want to think about the favors in both the wine and the cheese and how they will compliment or enhance each other.
Here's a couple very simple tips - 1) Pinot Noir and Sangiovese are wines that are straight out made for food - choose one from France/Italy to keep it easy and middle of the road. You'll find that these will pair with almost everything but (as with everything) some cheeses will go better than others. 2) Sweet wines like Port, Ice Wine, Sauternes will also match just about any cheese.

It totally depends on the red wine, but here are a few suggestions:
Cabernet Sauvignon - aged, sharp cheddar or camembert
I love Manchego with Spanish Rioja or other wines made from the tempranillo grape.
Emmenthaler - Wines from Chateauneuf du Pape
Port (tawny) - Bleu Cheese

I'm not an expert in either category - cheese or wine, but I'll tell you what I think.
My favorite red wine is Syrah. It's light for a red, & to me it goes well with alot of food. Shiraz is also good!
My favorite cheese is sharp or extra sharp.
My favorite appetizer is a tray of oranges, grapes, sliced apples with sliced cheese and a nice red wine.
I think the sharper the cheese the heavier bodied wine it should be. Maybe like a Chianti or Cabernet or maybe a Red Zinfadel.
Like I said, I'm not an expert, just my opinion. Taste test and see what you like.
