RICOTTA COOKIES
-1 c. butter, softened
-2 c. sugar
-3 eggs
-2 c. ricotta cheese
-2 tsp. vanilla
-4 c. flour
-1 tsp. baking soda
-1 tsp. salt
Method:-
1) Preheat oven to 350 degrees.
2) Grease cookie sheets.
3) Cream together butter, sugar, eggs, and cheese until smooth. 4) Stir in vanilla.
5) Combine flour, baking soda, and salt.
6) Beat into butter mixture.
7) Drop dough by 1/2 teaspoonfuls onto cookie sheets.
8) Bake about 15 minutes.
Cool on racks.
ICING:
-1 (1 lb.) box powdered sugar
-4 tbsp. butter, softened
-2 tsp. vanilla
-Milk
Method:-
1) Combine ingredients and add enough milk to make it soft and smooth.
2) Frost cookies and sprinkle with coconut or chopped nuts.

Ricotta Cheese Cookies
For the cookies:

2 cups gradulated sugar
1 (15 oz) container of ricotta cheese
3 teaspoons vanill extract
1 teaspoon salt
1 teaspoon baking soda
4 cups all-purpose flour
For the glaze:
1 cup powdered sugar
milk
sprinkles
Preheat oven to 350 F. Mix all of the cookie ingredients well until the dough sticks together into a big ball. It will be sticky. Drop by teaspoonfulls on an ungrased cookie sheet. Bake 10 minutes or until the bottoms turn golden brown. Let cool for 1 minute and then transfer to wire racks to cool completely. In a small saucepan slowly stir milk into the powdered sugar until it creates a glaze thin enough to be spread over the cookies. Stir over low heat then spread over cooled cookies. Quickly top with sprinkles.

Instructions
Cream margarine and sugar together until smooth. Add eggs, one at a time, and beat. Add ricotta and vanilla; beat 1 minute. Combine last 3 ingredients together and beat. Drop by teaspoonful onto cookie sheet and bake at 350 degrees for 11 to 15 minutes until bottoms are light brown.
One batch makes about 100 cookies.
Frost with confectioners sugar and milk glaze.

Makes about 50

Ricotta Cookies
1/4 lb. butter
1/4 C. ricotta cheese
1 t. vanilla
1 C. sugar
1 egg
2 C. flour
1/2 t. soda
1/2 t. salt
Soften butter. Blend with ricotta until creamy. Add vanilla and mix well. Add sugar gradually, and beat until well blended. Add egg and mix well. Slowly stir in dry ingredients until well blended.
Roll dough into 1" balls and flatten slightly on cookie sheet or use a cookie press to create decorative cookies.
Bake in a 350° F. oven for 10 minutes or just until edges begin to brown (don't over bake). Remove to cooling rack immediately.
Before baking decorate with goodies of your choice, M & M's, chocolate chips, halved maraschino cherries, etc.
