"Lemon-Studded Artichokes" - 2 servings

2 medium artichokes
1 tbsp. lemon juice
1 medium lemon; sliced
1/2 cup plus 2 tbsp. butter; melted
2-4 garlic cloves; minced

Rinse artichokes well; trim stems. With scissors, snip 1" off the tops. Snip the tip end from each leaf. Brush cut edges with the lemon juice. Spread artichoke leaves open. Using a small knife, carefully cut around each center choke. Scoop out and discard the fuzzy centers.
Cut each of the lemon slices into 6 wedges; place between artichoke leaves. Place artichokes in an 8" microwave-safe dish. Combine butter and garlic; pour over artichokes. Cover and microwave on HIGH for 10-12 minutes or until artichokes are tender. Let stand for 5 minutes. Serve with garlic butter from the dish.

Artichokes are easy I have made them lots:) here goes first to prep them you have cut off the stem to the base of the flower, and mark it with an X, then trim a little off the tops of the leaves with a clean pair of scissors(the reason for this is the leaves have barbs), now get a pot big enough to hold the artichokes( so they are in a single layer) and put in about 1/4 to 1/2 inch of water and gently bring them to a boil (meduim ) for about 10 - 15 min or until you can pull one of the leaves off with ease. The part you eat is the bottom1/3 of the leaf . While the artichokes are cooking prepare some melted garlic butter to dip them in 1 leaf at a time you will then come to the centre known as the heart you can dip the whole thing in the butter and bite into it . Buy some frozen artichoke hearts. They are already cleaned and cut up and easy to handle.

There are thousands of recipes for artichokes. I like to bake them in a butter and lemon sauce and serve plain.

This is so easy. Finely chop garlic and push it down between the leaves, steam until tender. Serve with melted butter.

start with steaming one then peel off the leaves one at a time dipping into garlic butter
