8 servings: 2 2/3 cups water, 1 teaspoon salt, 4 tablespoons butter, 1 cup milk, 2 2/3 cup flakes
16 servings: 5 1/3 cups water, 2 teaspoons salt, 8 tablespoons butter, 2 cups milk, 5 1/3 cups flakes

I all depends on the type whether the instant potato is granular(like sugar) or flaked but a good rule of thumb (for both kinds) is for 2 people : 1 Cup boiling water, 1/2 cup milk , 2 teaspoons margarine or butter and 1 cup of instant potato you always add more potato if not thick enough or more liquid if to thick. It totally depends on how much mashed potato mix you have. If you use 1 cup of mashed potato mix use, 1 cup water, 1/4 cup milk, 2 tablespoons of butter and a sprinkle of salt. Bring water, milk, butter and salt to boil, remove from heat and stir in mashed potato slowly. Then wisk with a fork until it's firm.

Very simple-- pour some of the flakes into a bowl, then stir in boiling water until the preferred consisency. I'd say the ration of water to potato would be about 3/4c water for 1c dried potato flakes. I like to add milk and butter to mine, tho, so I use less water.

For the kind that I have, it is equal parts flakes and water, and 1/2 that much milk. Add a little salt, and 1/2 tablespoon butter per serving.
