I live in Texas. We take tortillas cut them into quarters and fry. You can use the packaged tortilla chips but use the plain flavor.
Depending on how much you like Jalapenos, get a can of Jalapeno slices and chop or leave the slice whole
You can brown some grand meat with fine chopped onions and garlic and a lot of good chili powder.
Make a bed of tortillas, cover with yellow shredded or white shredded mild cheese, sprinkle some Jalapeno bits and sprinkle some of the meat, you can also add some dabs of re fried beans you have heated from the can. Put in the oven bake at 400 for about 15 mins and serve.
On top you can put some sliced avocados that have been soaked in lime or lemon juice and some brown or green sliced olives.....Your friends and family will say "OLE"!
You can also serve some shredded lettuce and chopped tomatoes on the side and each guests can put it with their nachos on their plate:

I usually like to put jalapeno slices over the cheese. This one was just lying around, so I thought I'd share it with you...
"Never-Better Nachos" - 2 servings
16-20 plain tortilla chips
1 1/4 cups shredded Cheddar cheese
Chopped olives (optional)
Cooked bacon pieces (optional)
Sliced green onion (scallions)
Sour cream or taco sauce
Spread tortilla chips in single layer in a 15x10x1" baking pan; sprinkle cheese over chips. Sprinkle with olives, bacon pieces and green onion, if you like.
Bake at 400* for 2-3 minutes or until cheese melts. Transfer to serving platter. Serve with sour cream or taco sauce.
(Microwave Directions: Arrange tortilla chips on microwave-safe pizza plate; sprinkle cheese over chips. Sprinkle with olives, bacon and onion. Microwave on HIGH for 1 to 1 1/2 minutes or until cheese melts.
(TIP: Spice up your nachos by replacing half of the Cheddar cheese with Monterey Jack cheese with jalapeno peppers.)

I like melting Mexican Velveeta Cheese, with a can of Rotel. Don't drain all the juice out of the Rotel. I eat Tostito's with the dip, but I prefer the lime flavored Tostito's.

I can. Instead of using plain corn chips. I use cheese doritos instead. The hottest peppers won't hurt w/ a splash of hotsauce. I like it spicy.

I use cheddar cheese, jalepenos or whatever they want on them, then BAKE them in the oven. Something about baking them makes all the difference.
