BAKED YAMS

INGREDIENTS
6 small yams
6 tablespoons butter
6 teaspoons honey
3 teaspoons white sugar
DIRECTIONS
Preheat oven to 250 degrees F (120 degrees C).
Place yams in a large pot of lightly salted, boiling water and cook for about 10 minutes, or until tender. Drain.
Arrange the yams in a lightly greased 9x13 inch baking dish. Cut a slit down the middle of each one and dab 1 tablespoon of butter in each.
Bake in the preheated oven for 5 to 10 minutes, or until golden. Spoon 1 teaspoon honey into each yam, sprinkle each with sugar and serve.

I have the best recipe in the entire world for yams, you need to try it. It's my grandma's recipe.

Yams in Orange Sauce

4lbs orange yams
1 1/4c sugar
2 Tbsp cornstarch
1 tsp salt
2 c orange juice
4 Tbsp butter
1 1/2 tsp grated orange peel

Peel yams and cut into half-inch slices. Overlapping slices, arrange in rows in a shallow three-quart baking dish. Set aside. In a small pan combine sugar, cornstarch and salt. Stir in orange juice until well blended. Bring mixture to a boil and cook, stirring constantly until thick and clear, about one minute. Remove from heat and add butter and orange peel. Pour over sweet potatoes. At this point you may cover and set aside until ready to bake. Bake at 400 degrees F for 45-50 minutes. Uncover and baste thoroughly with sauce. Bake uncovered 15-20 minutes or until tender and well glazed. Serves 10-12

Seriously, my family eats this every year for Thanksgiving and it's always a hit. I'm not a big fan of ordinary baked yams, but this is probably my favorite food! Enjoy!

I just made some tonight. I peeled and cut 2 and a half pounds yams up into chunks, then melted 3/4 cube butter and added 1/2 cup honey and a teaspoon lemon juice. I combined it all together and baked at 400 degrees F for 50 minutes. Rave reviews!! :)

Peel, boil , drain and mash. (Or use canned already mashed), add brown sugar to taste. Take a handful of mashed yam and wrap it around a large marshmallow. Roll in crushed cornflakes. Spray a glass baking dish and fill with the yam balls. Bake at 350 until hot.

Depends upon how you want to eat them!

Baked Whole: nuke 4 at a time for about 12 min.
Roasted: slice 1/2" thick, toss w/ oil, bake at 350 about 40 minutes
Casseroles: cut into even chunks and place in cold water; bring to a boil about 10 min. until fork-tender; then proceed w/ recipe

I like to bake them in the oven with a drizzle of olive oil on them. Make sure
the oven is preheated or they will turn brownish. A little salt and pepper too.
Oh yeah, I forgot. Peel them and cut them into large chunks. Hot oven..

i get them good and boiled like sweet potatoes, then i lightly mash them, add brown sugar, butter, nutmeg, cinnamon and i bake it for 350 degrees for twenty minutes.

my grandmother puts little marshmallows on them and then sticks them in the oven and bakes them...but I dunno how long....
