I don't know where to get the wings, but I think you should develop and build your own sauce. Any one can throw on a mass produced sauce. Wouldn't you want yours to stand out. Experiment and come up with something with your signature, especially if you are opening a "wing" restaurant. You want to give them something really good but different. When I go out for wings I return to the places that have really crispy wings with their own unique spice concoctions. Those are the best. No "cookie-cutter", standardized franchise stuff like Chili's or Applebee's, please. Make 'em hot for me, baby.

Sysco or U.S. Foodservices will satisfy your needs. Also, I think you can check both of their websites and see if they are having any food shows in your area and sample any of the plethora of chicken wings and sauces they carry.
Before you open the restaurant - poll your area and see if there's any demand for chicken wings. I know that I live in an area where Hooters restaurants abound for free entertainment for all the Marines stationed here, and there would be absolutely no way a buffalo wing restaurant place would stay open.

You have to make your own recipe to call them your own wings though. You could get sued. You need to go around tasting all the different chicken wings and start experimenting your own recipes. Other than that you'd just have to have it as another side dish with no name.. Ask a convenient store employee or watch for the truck to run & call that company. You know they have some of the best hot wings and they must be fairly cheap.

This website offers hot sauce and wing sauce by the case. For the chicken wings themselves I would fo to gfs.com and see if they have a store near you. They offer meats in bulk and can deliver locally I believe. I see them at the back doors of restaurants all the time. I love chicken wings. Good luck with your business venture.
