Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture.
Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all the ingredients into the crock pot. Mix and cook low 4-6 hours.

Gravy Baked Pork Chops
Serves 4
4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup
Instructions:
Preheat the oven to 350º F.
Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.
In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dishand pour the soup mixture over the chops.
Bake for 45 minutes. Serve immediately.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (1.25 oz pkg) Taco Seasoning Mix
1/2 Cup Sour Cream
1 (4 oz can) Diced Green Chili Peppers
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
Instructions:
Preheat the oven to 350ºF
In a large bowl add the ground beef. Sprinkle the taco seasoning mix and blend well. Add the sour cream and diced green chili peppers; mix until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Bake for 45 minutes. Drain off any excess fat.
Remove from loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Strawberry Shake
Serves 2
1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Whole Strawberries, garnish
2 Tbsp Sugar Substitute (recommended: Splenda)
Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
Guacamole Butter
Here is a recipe for a compound butter. Compound butters can be made from any of your favorite ingredients, stored in your refrigerator or freezer, they are ready whenever you need them. This one is call Guacamole Butter. You may have noticed this in another recipe used as an ingredient. It's wonderful on grilled steaks and fish. Once you make it and chill it, you can just slice off little "Coins" and place them on the hot food just as it comes off the grill. MMM!
Grill a rib eye steak and top with this butter. Great served with spanish rice on the side
Makes 10 servings
Ingredients:
1/4 pound butter, softened
1 tablespoon red onions, diced
1/2 tablespoon green pepper, diced
1/2 ripe avocado
2 tablespoons salsa
1/4 lime, juiced with pulp
Preparation:
Combine above ingredients in a bowl and mix with a handheld potato masher or your hand until well blended. Do not over blend, as the pieces of vegetable and avocado will look nice in the butter once chilled and sliced.
Once blended, place the butter onto a piece of wax paper and roll it up into a 1 1/2 inch diameter tube. Place in the refrigerator to set up for about an hour.
Once the butter is firm, you can slice it into 1/2 inch slices and top off your favorite steak or grilled fish. It's also great on fresh steamed asparagus or beets.

Spanish Rice
A must with southwestern dishes of all kinds. Simple to make and holds up well in the refrigerator for leftovers.
Makes 4 servings
Ingredients:
2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped

beef tenderloin. Oven to 4 hundred. placed some olive oil, garlic, overwhelmed rosemary, salt and pepper on the beef. (in case you may marinate a pair hours, that's stable - yet do no longer use the flavored tenderloins, they're constantly incredibly salty) cook dinner for 15-20 min on the two section (much less for smaller quantity) and pull out of the oven. cover in foil and enable relax for 10 min till now you slice it. you may cook dinner potatoes - universal or candy - contained in the oven with the roast. Or chop them and toss with olive oil, wine, mustard, garlic, salt and pepper and roast them till they're gentle. Yum. Have clean steamed greens and a salad on the section and you're stable. The prep time is minimum, the beef is lean, and the only time you're spending is waiting for it to cook dinner with none tending. that's ok if the beef is slightly crimson contained in the midsection, too.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

chop one pd. bacon , fry till semi crisp, add one large chopped onion, continue to fry till onion is tender , add two cans chopped or stewed tomatoes, a little garlic powder, oregano, salt and pepper simmer to blend flavors, serve over spagetti noodles, so easy and sooooo good, i always get raves for this one.
