I really cant tell you. I have had the same problem before. Its just way too tough. But I'll let you in on a secret! Best jerky in the world (nice and soft) I found it on the way home from Vegas. Its a little place called Alien Jerky. Awesome flavor and texture (get the premium) its made from the beef brisket. heres the site
