anyone know a good simple recipe. ive been givin a few but none say how to get the whole persimmon into a pulp.

Persimmon Holiday Cookies
Yield: 40 Cookies

Ingredients

3 persimmons,very ripe & mushy
1 ts baking soda
1 c granulated sugar
1/2 c butter
1 lg egg, beaten
2 c all-purpose flour
1 c pecans, chopped
1 c dates, chopped
1 ts ground cloves
1/2 ts ground nutmeg
6 oz chocolate chips

Instructions

Using a food processor or mixer thoroughly process the persimmon pulp,
butter, baking soda and sugar until well blended and creamy. Add the
whole egg, beat well.

In another bowl sift flour with spices, then add the nuts and dates
blending by hand. Add the processed pulp and mix well.

Drop by teaspoonfuls onto a greased baking sheet. Space mounds 1" apart.
(They remain mounded and do not overly spread when baked).

Bake for 15-20 minutes until golden brown. Cool on racks.

Melt chocolate chips in a plastic squeeze bottle that is placed in hot
water. When melted drizzle the chocolate over the cookies or dip one half
of each cookie into melted chocolate.

Persimmon cookie recipe

INGREDIENTS
2 ripe persimmons, pureed
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 egg
1 cup white sugar
1/2 cup butter
1 cup raisins
1 cup chopped walnuts

DIRECTIONS
Preheat oven to 350 degrees F (180 degrees C).
Dissolve baking soda in persimmon pulp and set aside.
Sift flour, spices and salt together, set aside.
Cream together butter or margarine and sugar until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins.
Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.
