get three small bowls
in 1st put seasoned ALL PURPOSE flour
in 2nd put 1part egg 1 part evaporated milk
in 3rd put your bread crumbs or cracker meal
dip in that order (by the tail) and lay on a flour dusted pan
DEEP fry in grease 320 - 330 degrees hot!
Do not put in warm grease, all the breading will come off, and they will be very greasy.
Fry until they float (not very long)
make some tarter sauce with onion, mayo, and green olives,
ENJOY!!!1

Panko also called Japanese style breadcrumbs are the way to go. Just no substitute for a great light crispy crust. Peel and devein shrimp, (if available use pink gulf shrimp), toss in a bowl with a little salt pepper and fresh lemon. dredge in flour then drop in buttermilk and then the bread crumbs. if you put the bread crumbs in a zip lock bag and shake the shrimp it is less messy. If you have a deep fat fryer good for you if not: Put enough oil in a heavy bottomed pan like cast iron to cover shrimp fully. An inch and a half or two inches should do it.Heat to 375 degrees and add shrimp slowly careful not to do too many at once or the oil will cool and they will become greasy. Fry till golden brown. They will begin to float. Serve with fresh lemon wedges,cocktail sauce and or tarter sauce. For a nice treat, mix some crumbled blue cheese and chopped celery into some buffalo sauce and toss the shrimp when they are done. Your gonna love these shrimp! Good luck

INGREDIENTS
1 quart vegetable oil for frying
4 cups shrimp, peeled and deveined
1 egg, beaten
2 cups dry bread crumbs
DIRECTIONS
Heat oil in a large skillet. Dip the shrimp in the egg, then coat the shrimp with bread crumbs. Fry the shrimp in the hot oil.

Panko Fried Shrimp, these babies are crunchy
16 large or jumbo shrimp
Canola oil, for frying
1 cup flour
1 tablespoon salt
Pepper, as desired
2 eggs
1-2 cups Panko or other Japanese-style dried bread crumbs
Lemon wedges, for garnish
Parsley, for garnish
Rinse and peel fresh shrimp, leaving tails on. Devein. Shake off excess water.
Heat oil in heavy pot or fryer on stove. Oil should be 3-4 inches below the top of the pot, but still deep enough to immerse shrimp. You'll want oil at about 360 degrees to fry shrimp. (Oil should have a slight haze over it but not be smoking.)
Mix together flour, salt and pepper in one shallow bowl. Scramble the eggs in another. Put the bread crumbs in a third bowl. Dredge shrimp in flour, dip in egg, then in bread crumbs to coat thoroughly. When you have 4-5 breaded, put them in the hot oil. Let them fry, turning if necessary, until golden brown. Remove with a skimmer or slotted spoon. Put on a wire rack with paper towel underneath it to drain. (You also can blot on paper towel, but a wire rack keeps them crisper.)
Fry in batches. Serve on a platter with wedges of lemon and parsley sprigs.

Mix an egg with a splash of milk and salt & pepper. Dip the shrimps in so they are fully immersed, take them out and then put them in to the breadcrumbs. I usually use a plate full of crumbs - and because shrimps are small, you may need to use a spoon to sprinkle the crumbs on the top side, or to mix them around in it.

Breaded Shrimp With Garlic Lemon Dressing
Yield: 1
Ingredients
1 1/2 lb large shrimp; cleaned 750 g
2 ts olive oil 10 ml
2 garlic cloves; minced 2
1 ts chopped fresh rosemary or
-pinch dri; ed 5
1 ; ml
1/4 ts salt 1ml
1/2 ts pepper 2 ml
2 c fresh whole wheat or white
-breadcru; mbs
1 ; 500ml
4 c arugula or other greens 1 l
------------------------HOT GARLIC SAUCE------------------------------
1 tb olive oil 15 ml
2 cloves garlic; finely
-chopped 2
1/4 ts hot red pepper flakes 1 ml
2 tb lemon juice 25 ml
2 tb balsamic vinegar 25 ml
1/4 ts salt 1 ml
1/4 ts pepper 1 ml
1/4 c chopped fresh parsley 50 ml
Instructions
Cut shrimp along top to open, but do not cut through. Pat shrimp very
dry.
In bowl, combine 2 tsp/10mL olive oil, minced garlic, rosemary, salt and
pepper. Toss with shrimp.
Place breadcrumbs in large flat dish. Dip shrimp in crumbs and pat crumbs
in gently on both sides. Arrange shrimp in single layer on baking sheets
lined with parchment paper.
To prepare sauce, in a small saucepan, warm 1 tbsp/15 mL olive oil with
chopped garlic and hot pepper flakes. Add lemon juice, vinegar, salt and
pepper. Remove from heat.
Just before serving, cook shrimp in preheated 425F/220C oven for 6 to 8
minutes, until just cooked through.
Place shrimp on bed of arugula and drizzle sauce over top.
Sprinkle with parsley.
