Hey! I'm going there in December too!
I recommend Victoria Harbour and Star Ferry, especially at night.
I enjoyed the Hong Kong's version of walk of fame, and I think thats near the harbour although I could be wrong since I just follow my parents since they know where they're going.

If you are heading to Disneyland, then I recommend seeing the big Buddha nearby, very long walk and lots of stairs, but its a brilliant view at the top.

Hong Kong heritage museum in Shatin is a good place to go to.
Tsim Sha Tsui is good for food and the evening scene is good too. Beware of hookers and girls working the street, they are all over the square.

You can go to the Peak, you can go there at around 4 or 5 pm, so you can see both the daytime and nightime Hong Kong view. (which is quite famous, the oriental pearl) You can also take the newly built cable car in Lantau, which will take you to the big Buddha. Then Lan Kwai Fong is also a good place famous for numerous bars and restaurants located there, many westeners go there, you should go there at 9 o'clock at night when fun begins. You should also take the Star Ferry to cross the harbour at night so you can see the beautiful buildings on the shore. For food, you can try "Yum Cha", which local families would do on sunday, there are chinese restaurants everywhere where you can yum cha, you can check your hotel or travel guide to pick one. Have fun!!!

hong kong in one day
catch a tram up to victoria peak for a good view of the city and stretch ur legs on a summit circuit.
back down at sea level , u could have lunch at the tan tan wan thai resto, do some shopping at the pacific place shopping mall in admiralty and watch the sun go down from the 7th floor of the hongkong convention & exhibition center.

u could take the star ferry to tsim sha tsui and visit the art , space or history museums. have some dimsum at wan loong court in the kowloon hotel then browse along nathan rd until u are hungry enough for afternoon tea at the peninsula hongkong hotel.
after dark , wander up temple st to the night market.

Yes, definitely Disney HK........and go to the top of Mt Victoria (if its even still called that since China took over), its a great view. There used to be a cool shopping mall at the summit, I don't know if it's still there, its been awhile since I was there.
