The hands??? Really? I've usually heard it was the eyes. Once I heard it was the heart. Not the organ that pumps blood, but the part of you that can love and open up or close down.

I think the eyes are definitely the windows of the soul. The eyes see, the brain interprets and the soul reacts in the body.

It has commonly been attributed to the eyes of a person.
The soul being the Spirit of the person and the eyes being as a window to be able to look through and see the very Spirit of the person.
You look at the eyes of a person and you can get a feeling or "see" what they are about.

Hmm, I never thought of hands...
But it's kinda true... I have a kind of fixation with hands. When a guy touches my hands with his I feel it's very sensual. More than looking into their eyes anyway.
Also, think of meditation - Buddhists and Hindus use their hands to symbolise things, for example touching the ground with one hand... I don't know about the quote though, but I thought your question was interesting.
