2 cups all-purpose flour, sifted before measuring
1/2 teaspoon baking soda
1/8 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons shortening
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
2 tablespoons vinegar and enough regular milk to make 1/2 cup

Into a bowl, sift together flour, baking soda, nutmeg, and salt. Cream shortening; gradually add sugar, beating until light and fluffy. Add egg; beat well. Stir in vanilla.
Add combined vinegar and milk alternately with dry ingredients; stir just until well blended.

Roll small quantities of the dough at a time, to about 1/3-inch thick. Cut doughnuts with a 2 1/2-inch cutter and let stand for about 10 minutes. Fry in hot fat at about 365° to a nice golden brown. Turn once. Fry only 3 or 4 batches at a time to keep fat from cooling down. Drain on paper towels. Makes about 18 doughnuts.

These are a little different from traditional donuts.

Italian Donuts
Makes 3 dozen

1 15-ounce container ricotta cheese
4 eggs
1 tablespoon vanilla
1-1/2 cups all-purpose flour
1/2 cup granulated sugar
2 tablespoons baking powder
1/2 teaspoon salt
Cooking oil for frying
Sifted powdered sugar or granulated sugar or cinnamon/sugar

In a large bowl beat ricotta cheese with an electric mixer on medium speed until smooth. Add eggs and vanilla; beat until combined. Add flour, granulated sugar, baking powder, and salt. Beat on low speed until just combined. Let batter stand for 30 minutes.

Drop batter by well-rounded teaspoonfuls, four or five at a time, into deep hot fat (365 degree F). Cook 2-1/2 to 3 minutes or until golden brown, turning once. Remove doughnuts with slotted spoon and drain on paper towels. Repeat with remaining batter. Cool completely. Shake doughnuts in a bag with powdered sugar, granulated sugar, or cinnamon/sugar mixture. Makes 3 dozen.

the quickest dough nut recipe i use is grab a can of biscuits in the dairy case at the store; heat up some oil and open the can of biscuits take them out and stretch them out one at a time and poke a hole in the middle; place them into the hot oil and fry until golden brown and flip over to cook the other side remove from the hot oil onto paper towels..when cooled down a little coat them in powder sugar/ cinnamon sugar; or you can frost them with can frosting ...good luck
