I usually answer not ask but as I'm serving my parents I thought I ought to check...

I marinated a flank steak today in a soy, ginger, sugar, vinegar, garlic, ginger and a pinch of pineapple marmalade marinade. Steak in on the grill and smells great...

I have the leftover marinade boiling on the stove, would it be safe to serve on the side? I never would do this for chicken or pork, but I have done it before with beef, after thouroghly boiling.

What do you think? Thanks for your help!

Yes, food safety is my concern. While I may toy with killing my parents sometimes (kidding!) the dinner is supposed to nourish not harm! Thanks so much for your quick answers--haven't even flipped the steak yet!

As long as the marinade is heated to over 71 degree c, ( boiling beats that), reduce it to a syrup and it will be ok. and it's great drizzled over some parboiled persnips and potatoes , then pop them under the grill.

Boil it to at least 165 degrees for 1 minute. This should safely kill anything, but just for kicks and safety next time, double your marinade and reserve half of it to become a sauce.

If you marinated the steak in the fridge, then boiling the leftover is okay. Make sure to boil it for at least 5 minutes to make sure to kill any bacteria.

After boiling, it will be perfectly safe. Even with chicken, boiling kills the bad guys.

marinade sounds like a sweet and sour barbecue sauce/teryaki sauce to me. Yup, safe after cooking. Reduce to sauce and serve as a dipping or drizzle.

Sure after all the boiling has killed any bacteria if that is what you were concerned about.

Boiling it for 10 minutes should render any possible pathogens harmless..........very good question, though.......
