My daughter is allergic to the whole egg so I can't use Egg Beaters or anything that contains parts of the egg. My problem with baking cakes is that it doesn't rise well just adding extra water, flour and baking soda. I got that substitute out of a cookbook. I know you can also use applesauce but she is allergic to apples to. Any suggestions?

I T. veg oil
2 T water

The oil and water simulate the egg yolk and white. I got this from the Paula Dean cookbook and it works. Ive used a number of times and my baked goods come out just fine, and no one has ever noticed that the egg was missing.

Ground Flax seed mixed with water. Use the regular recipe just sub the flax/water for the egg.

Egg Substitute, Flax II (P, TNT)

Yield: Equivalent of 1 egg in baking

1 tablespoon flax seeds (found in natural food stores or natural food sections of most grocery stores)
3 tablespoons water

Blend for 2 to 3 minutes, or boil for 10 minutes or until desired consistency is achieved to substitute for one egg.
