I think you would have to cook it. It's hard and fibrous and I doubt your teeth could penetrate it. But it's not harmful.

Have you ever managed to break into a mango's stone and extract the kernel?

The kernel of a mango stone is too hard to bite into, and it is better to plant it and it will grow into a lovely plant.
