"Western Chili" - Serves 8 to 10

3 cups dried red beans
6 cups water
2-3 bay leaves
2 lbs. ground beef
1/2 lb. pork sausage meat
3 cups chopped onions
3 tsp. minced garlic
1 tbsp. chili powder
3 (8 oz.) cans tomato sauce
1 tsp. red pepper flakes
1/8 tsp. curry powder
1 tbsp. ground cumin
1 tbsp. salt
1/4 tsp. hot pepper sauce
1/8 tsp. cinnamon

1) Soak beans overnight. Next day, drain; place in large pot with the 6 cups water and the bay leaves. Cook about 45 minutes, until tender; drain.
2) Brown ground beef and sausage meat with onions and garlic about 10 minutes; drain. Add to beans, along with chili powder and remaining ingredients; simmer 1 hour.
(NOTE: You can eliminate 45 minutes of cooking time by substituting canned beans for dried.)

Chili

1 pound bulk pork sausage
1 pound ground beef
2 (15 ounce) cans spicy chili beans
1 (16 ounce) jar salsa
1 (16 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1 (8 ounce) can tomato sauce
8 ounces process cheese (eg. Velveeta), cubed
1 1/2 teaspoons chili powder
1/2 teaspoon cayenne pepper
DIRECTIONS
In a soup kettle or Dutch oven, cook the sausage and beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through.

I use 3 cans of beans. It can be any combination of black, pinto or kidney. I usually use 2 cans of kidney and 1 can of pinto.
As well as a pack of McCormic Chili seasoning, 28 oz can diced tomatoes, chopped onion, 2 cloves of garlic, and cooked ground beef all mixed together simmer for an hour. I guess you could use sausage instead I have never tried it. I love chili with cornbread!

I made up my own yet, it is so good & elementary. right here you pass. a million Pkg Carol Shelby's Chili blend (the single in the brown bag) a million lb. floor chuck a million sleeve Chorizo a million lg can Tomato Puree a million lg can total Tomatoes a million can Tomato sauce a million lg can Pinto beans a million lg purple onion chopped a million C. pork Broth Brown floor chuck. upload chopped onions. Satue in simple terms until pork is finished. (do no longer over prepare dinner)Squeeze chorizo from sleeve (each so often I upload 2 for extra style) and injury up with the pork. upload puree, tomatoes (with juice), tomato sauce, pinto beans (with juice) & pork broth. Now upload your seasoning blend. do no longer upload the masa until the top of cooking in the different case your chili would be too thick. Simmer for no less than 2 hours. (did you already know that including white vinegar to a bowl of chili helps with the warmth?)

I couldn't just sit around and do nothing like my doctors suggested.

They didn't want me to do anything or to take herbs or herbal remedies, but I had to try something - they just wanted me to do dialysis!

This program allowed me to take control of my health. I went from Stage 4 to Stage 3 kidney disease.

tamale pie...just buy ready-made chili,pour in an oven ready pan ,pour prepared jiffy mix cornbread batter to cover the chili...not too thick if the chili has no meat, add your own cooked meat to the chili. cook in oven until cornbreads done....easy and deeeeliscious
