My husband is tired of the same old ham and cheese sandwiches for his work lunch. What are some easy sandwiches to make him for lunch or any other easy lunch ideas that don't require major refridgeration (he has a little cooler) Thanks.

"Hero Sandwiches" - 4 servings

4 (7"-long) bread rolls; split lengthwise
Italian salad dressing
1 lb. assorted sliced cold cuts
1/2 assorted sliced cheeses
1 medium red onion; thinly sliced and separated into rings
1 large tomato; thinly sliced
Shredded lettuce
Hot pickled peppers (optional)

Sprinkle cut sides of rolls with Italian dressing. Arrange cold cuts and cheeses on rolls. Top with remaining ingredients; sprinkle with more Italian dressing. Cut each sandwich in half.


SANDWICH FILLINGS -

Egg Salad Filling (2 cups):
6 hard-cooked eggs; chopped
1/2 cup finely chopped celery
1 tbsp. minced onion
1/3 cup mayonnaise or salad dressing
1/4 tsp. salt
Dash pepper
Stir together all ingredients until well mixed.

Tuna Salad Filling (1 1/4 cups):
1 (7 oz. can) tuna; drained
1/4 cup finely chopped sweet pickle
1/2 cup mayonnaise or salad dressing
1/4 tsp. salt
Stir together all ingredients until well mixed.

Corned Beef-Onion Filling (1 1/2 cups):
1 cup chopped cooked corned beef
1/2 cup mayonnaise or salad dressing
1/3 cup minced celery
1 tbsp. minced onion
2 tsp. prepared mustard
Stir together all ingredients until well mixed.

Chicken Salad Filling (1 1/2 cups):
1 cup chopped cooked chicken
1/2 cup chopped celery
1 1/2 tsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper
1/4 cup mayonnaise or salad dressing
1 hard-cooked egg; chopped
Stir together all ingredients until well mixed.

This is called a sandwich but is served open faced and to me does not even resemble a sandwich....it is the best! Hot Brown Recipe - Turkey Sandwich with Cheese Sauce A Kentucky tradition. Hot brown sandwiches with turkey, bacon, cheddar cheese, and sliced tomato and other ingredients. 1/4 cup all-purpose flour 2 cups milk 1/4 teaspoon salt 1/2 teaspoon Worcestershire sauce 1/4 cup grated sharp Cheddar cheese 1/4 cup grated Parmesan cheese 1 pound cooked turkey, thinly sliced 8 slices toast, crusts trimmed 4 slices tomato 8 strips bacon, cooked 1/2 cup Parmesan cheese PREPARATION: Melt butter in saucepan over medium-low; add flour and stir until smooth and bubbly. Add milk, salt, Worcestershire sauce, cheddar cheese, and 1/4 cup Parmesan cheese. Continue to cook, stirring constantly, until thick and bubbly. Cut toast in half diagonally and place on a baking sheet (or use individual baking dishes). Arrange turkey slices on the toast and cover with hot cheese sauce. Top with tomato slices and bacon strips then sprinkle 1/2 cup Parmesan cheese over each sandwich. Place under broiler until hot and bubbly and lightly browned. Hot brown sandwich serves 4.

Doing even the same ham and cheese but on a tortilla will add diversity to his lunch. You can also do shredded chicken, shredded cheese, salsa and sour cream on a tortilla for a fajita. Tortilla wraps give you a variety of things to do - or just do the same as a sandwich, but on the wrap!

Well there is tuna sandwiches and egg ones. You can also try giving him leftovers from last nights dinner. You can also go on a recipe website and get ideas from there.

BLT sandwiches. Keep the veggies separate and the bread and bacon separate in little baggies and it's ready to go. Or you can buy that Devil's ham or chicken spread and he can assemble it at work. PB & Jelly is always good. Turkey slices or Lunchables. I know they are for kids but I love them. Hope this helps.

Dagwood Sandwich
Onion Roll
Butter
Turkey-shaved
Ham-shaved
Cotto salami-thin sliced
Provolone-thin sliced
Swiss cheese-thin sliced
Sharp Cheddar-thin sliced
Shredded lettuce
Tomatoes-thin sliced
Red onion-thin sliced

Slice roll in half, butter both cut sides. Layer turkey, ham, salami, provolone, swiss, cheddar, lettuce, tomato, and onion on bottom, place top of bun over all. Wrap tightly in saran wrap, refrigerate overnight.

Mine has a little cooler also. I make sand. from left over chicken, turkey,meatloaf. My hubby also take those campbell cups. He has a microwave at work. Add a little lettuce to his sandwiches. Makes it a little different. Good Luck

Add cooked bacon to a peanut butter and strawberry preserves sandwich on toasted bread and sprinkle with some poppy seeds on it (white bread is ok... but sourdough is fantastic!).

you could do a chicken salad sandwich...just boil some chicken...put it in a processor/or blender,but up celary,onion,and put some mayo in it, and voila, and chicken salad....make alot that way he can have it for a few days......how about peanut butter and jelley....you could do meatloaf sandwich....that would last a while too....i like egg sandwich's those are easy too

hmmm tuna sandwiches with veggies.... very tasty!

You can also make him some sort of rice salad.... I do mine with tuna, onions, green and other coloured peppers, tomatoes and other vegetables that your husband might like.... you can add olive oil, cheese or some mayo.

It won't take much to prepare....
