I bought a grilling cage. Its a wire mesh holder with a handle you can close the fish in before grilling. It holds the fish together and you don't need foil. The fish comes out really good. When using foil it tends to be mushier and you don't get that real grilling texture or taste.

I cook salmon in foil on the grill frequently it's delicious. I use only extra virgin olive oil for cooking. Never heard any bad things about cooking in foil.

With or without foil is O.k . If you have any kind of reservations you can try wrapping the fish in leaves like plantian- oriental style. i just love it

You can cook either way...If I'm not using foil..then I like to use a basket.....it's a shallow enclosed basket so you can flip it if you want to..... I do't use much oil...I like a little butter and some seasoning....then make a dill sauce to go with it out of light mayo, light sour cream and dill (fresh or jar).
Good Luck...Happy Thanksgiving !!!!

heating it on the grill is healthy and better tasting if you just taste it without heating you might get poisoned because it has mercury.
