I have been making traditional Xmas dinner for around 8 people for the past 5 years. I would be getting up at 5 in the morning to put in the turkey wrapped in pancetta and butter under the skin. it adds flavour. Then I would be on the go until 3/4 in the afternoon keeping everybody happy but this year I plan on something different, Italian food is my best so i will go with that. It makes a nice change and will give me a bit more family time. Any way good look if you are looking on a trad turkey dinner then email me and I can give you some Ideas.

I'm going to start with a small rant on canned cranberry sauce... It's awful! Regardless of whether you get the "whole-berry" or the "jellied" stuff, it's really not worth eating... which is a shame, because good cranberry sauce is the perfect accompaniment to just about every meat that is traditionally served during the holidays, and it is incredibly easy to make. Turkey, chicken, goose, duck, pork roast, ham, you name it - it's good with real cranberry sauce.

So, here's my recipe (also to be found on the back of most fresh cranberry bags):

1 bag fresh or frozen cranberries
1 medium orange, cut into quarters, seeds removed, peel on
3/4 cup granulated sugar (more or less to taste)

Put berries and orange pieces into a food processor. Chop until well mixed and uniform in texture (it should be about the same consistency as pickle relish). Add sugar to taste. Refrigerate for at least 4 hours before serving. Enjoy!

Don't know how experienced in cooking you are?
Soup, traditional Xmas dinner.
Pudding.cheese & biscuits [ which ever that order may come in]
Plenty to drink [ make sure your guest's bring plenty]
But do think of those who might be driving. So make sure you have some nice alternative drinks to hand

candid yams
cut yams into circles
rinse yams
place uncooked yams into baking dish or alumium pan (2 elimanate soupy yams)
real butter
cinnamon,nutmeg,alspice any other spice
the secret is pure honey; not sugar(too sweet) honey will make it just right
be generous with the honey
bake for about 45minutes or until yams are soft
fold yams or you can base with the juices from the yams and honey, add marshmellows once yams are cooked, place into oven without top brown marshmellows
boil ham in pineapple jucie
stuff salmon with real crabmeat not the pink and white crabmeat(imitation) make the crabmeat stuffing with sage sausage, apple, pear, red, green, yellow peppers, onions, celery
cook the sage sit aside
add veggies and fruit to pan sautee once cooked
add veggies, sage and fruit to cornbread (regular jiffy or homemade cornbread, college inn broth or any broth from the meats you've cooked for moisture(not too much, not mushy)
add to baking dish
place cornbread stuffing in oven, bake for about 30 min. or until golden brown
cook salmon in alumium pan with real butter on top pieces not much just to give it flavor and season it lightly on 350 for abut 20 minutes or until done
