yes I believe red potato do not have as much starch,,

you can check by a pan of water, the potato with more starch will sink, the other will float

I personally like red potatoes because they are firmer and don't appear as starchy as the russets.

No. They should be equal. If you eat the skin on both potatoes however, you get more fiber.

red potato's have a nicer taste. Nutritionally I don't know
