Ingredients
300g raw prawns, shells removed, deveined and finey chopped
1 piece piece of fresh root ginger (2cm), grated
1 large spring onion, finely chopped
1 egg white, lightly beaten
1 tbsp cornflour
1 dash of Sesame Oil
1 dash of dark soy sauce
0.25 tsp Salt
6 slices brown bread, toasted
5 tbsp white sesame seeds
500ml groundnut oil for deep frying


Method
1. Mix the prawns with the ginger , spring onion, egg white, cornflour, sesame oil, soy sauce and salt.

2. Spread one side of each slice of bread with the prawn mixture, and dip the filling side into sesame seeds.

3. Deep fry the toast in hot oil, over a moderate heat - filling side up until golden brown – about 3-5 minutes.

4. Drain on absorbent paper and serve straight away.

this is how the restaurants do it. the amount of prawns to chicken is what makes it more quality or cheap. u can just use prawns if you want but with chicken gives it a good texture.

im chinese and this is how u do it.
get same amount of raw prawns(tiger) as raw chicken.
- put into blender or chop till a paste.

mix to that some salt, sesame oil if you have any and an egg.

the egg helps bind the mixture to a paste. doesn't matter if little lumpy.

spread thinley onto any type of sliced bread but white is best. make sure the spread is thin about 5mm as too thick won't cook the inside and too little is like toast.

sprinkle sesame seeds onto the meat, shake off excess seeds. these can be stored in a freezer for quite along time so u can make alot. when u need them just fry straight from frozen on a shallow pan with oil- make sure the oil is hot but not too hot otherwise inside will be raw nad outside will be burnt.

best way is to fry in a deep fat fryer. fry till golden brown .

oil should be about 150'c the toast floats so turn over when one side is golden. drain and eat.

if you like it spicy- add chilly to the meat mix or white pepper.

Sesame Prawn Toasts With Chilli Dipping Sauce

Ingredients

1 groundnut oil; for deep-frying
4 spring onions; trimmed
300 g raw peeled tiger prawns; well drained(just under 3/4lb)
1 ts cornflour
1 tabasco sauce; for seasoning
1 egg white
4 md slice white bread
2 heaped tbsp white sesame seeds
4 tb tomato ketchup
1 tb clear honey
1/2 lemon
1 salt and freshly ground black pepper

Instructions

Preheat a deep-fat fryer or wok with 5cm/2" oil.

1 Chop up the spring onions and add to a processor. Add the cornflour, egg white, prawns and a few drops of Tabasco. Season and blitz to a paste.
2 Spread the prawn mixture on the slices of bread. Sprinkle over the sesame seeds, press down lightly to help them stick, cut off the crusts and cut each slice into eight triangles.
3 Place the sesame prawn toasts in the deep-fat fryer or wok and cook in batches for 1-1 1/2 minutes until lightly golden, turning them over half-way through. Drain on kitchen paper.
4 Place the tomato ketchup in a small bowl, add the honey and squeeze in the lemon juice. Season to taste and add a few drops of Tabasco.
5 Spoon into a small dipping bowl and place on a serving plate or platter. Arrange the sesame prawn toasts around the edge to serve.

1 lb cleaned raw prawns, chopped
1 teaspoon salt
1 egg
2 teaspoons fresh grated ginger
1 tablespoon light soy sauce
2 tablespoons chopped green onions
1 1/2 teaspoons sesame oil
10 slices thinly sliced bread, crusts removed
4 tablespoons sesame seeds, approx
oil, for deep-frying

To make the paste, put in your food processor: the prawns, salt, egg, ginger, soy, onions and sesame oil, process into a paste.
Cut the bread into rectangles, approx 3 per slice.
Spread the prawn paste on the bread, with a slight mound in the center.
Put the sesame seeds in a small bowl and press the paste side into the seeds.
Heat the oil to a medium heat and deep-fry the toasts paste side down for 2 to 3 minutes then turn them over and fry until they are golden brown.
Remove from the oil, drain on paper kitchen towel.
Repeat process until they are all done.
NOTE: Use bread that is not fresh, if it is, dry it out in your oven, it will absorb less oil You can also make the paste by hand chopping everything very finely.

this works every time


get 1 slice of bread and cut into 4
place under grill until toasted
get some prawns
place them on the toast
get some sesame seeds and sprinkle on the prawns and toast
put them back under the grill until cooked


easy eh! or better still phone the chinese takaway you tight ba@@ard
