I had worked on windows linux Mac
each Operating system have their Scope and limits.
Simply you need a Database server go ahead and choose Redhat Linux. Best configuration (Command line mode/Better security/Bugs free RH ES 4 or RHAS 4 will work best I had worked both of them for database purpose RH ES is good enough and besy buy. In case need more control/tools Choose RH AS.

For Multimedia application No Challange to Windows
Cause there are many tools available that works.
Note if you are a serious geek then Mac will also a good suggestion.

If you are choosing for D. Processing Model
I had worked with a PCQ linux {Version 5}
It support Grid computing that can be a best tool if you want to apply grid computing.

So conclusion is None a single operating system that can solve each and every desire you have. although linux is a good choice
One thing you can do

Install linux and install RPM of needed application.
That will give you what you need.
