I make cornbread regularly but it always seems to come out a little dry. I don't want it to crumble when eating it.

The best ever cornbread recipe...and it's moist and yummy!

Put 1/3 cup oil in a cast iron skillet and put in 450' oven.
MIX:
1 cup white cornmeal mix
1 cup self rising flour
1 large egg
1 cup whole buttermilk
and half of the HOT oil from the skillet.
Stir and add a little more buttermilk if needed to make it a bit thinner.
Pour mixture into hot skillet w/hot oil and bake at 450' for 23-25 minutes.

2 Cups Aunt Jemima Self Rising White Corn Meal
1/4 cup of sugar
1/2 cup of flour
2 eggs
1/2 stick of butter (margarine)
3 tablespoons corn oil
Milk

This is a guestimate on the true amounts as I do not cook by recipes but by sight and a lot of experience.

Preheat oven to 350 degrees.

In a skillet or pan combine butter and corn oil, and place in oven to melt. Put corn meal in a mixing bowl, add flour, add sugar and eggs. Mix, however consistency will be very thick. Add milk to desired consistency.

Make sure butter (margarine) has melted, watch this carefully as the mixture may begin to pop in the oven, especially if margarine is used instead of butter. Remove from oven and pour into the corn meal mixture, stir well. Immediately pour mixture into the hot pan. Bake about 35-40 minutes or until top browns to desired color.

The more flour you add the better the cornbread will stay together and not crumble...just make sure not to add too much.

Here is one that I came up with.

2 boxes jiffy corn bread mix
2 eggs
1 can cream corn
1 C sugar depending on how sweet you like it
1 TBS salt
1 pint heavy cream

Mix it all together in a bowl
grease a 9 x 13 pan and add mix

I like mine on the softer side and usually takes about 40 or 45 mins to cook. I just check on it and as soon as it starts pulling away from the sides i take it out.

More on the cake side but tastes pretty good

2 eggs
1/4 cup sugar

2 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup cornmeal
1/2 teaspoon salt
1 cup plain yogurt
1/4 cup butter, melted

Preheat oven to 400° F. Beat eggs in a mixing bowl and add sugar. Mix well. In a separate bowl, whisk flour, baking powder, soda, cornmeal, and salt. Add the dry ingredients alternately with the yogurt to the egg mixture. Stir in cooled, melted butter. Bake in a greased 10-inch cast-iron skillet for 15-25 minutes. Watch closely after the first 15 minutes to ensure it doesn't burn.

Spanish Butterfly, and everyone else on this page, please accept my apology for not having an answer to contribute. But, my printer is down and I need to mark this page with an answer of my own because ALL of you have shared some of the best moist cornbread recipes and ideas I've seen in a long time. Thanks so much. I love cornbread so much and since my mom passed away I cannot get her recipe right. My cornbread turns out so dry. Thanks again.

I had the same problem wit cornbread,until I found a recipe that calls for sour cream in it,it's moist and delicious.

I always add veg oil or butter to the pan or skillet that i cook it in and heat it in the oven until it melts and then pour it over into the batter and mix it in. It helps mine become very moist.

A very good cornbread is to add sourcream and green onion to your cornbread batter for sour cream and onion cornbread. Yummy

if you like your cornbread recipe but for that, try adding 1/2 to 1 can of cream corn to the recipe
