My husband smoked a killer turkey last year. I don't know the timing details but it was a big bird and had to be finished off in the oven for a bit after a good night in the smoker. He stuffed it with oranges last year and that rocked.... just wondering if anyone has other smoke-friendly stuffers. Apples, maybe? Any recipes worth sharing?

For aromatics throw in lemons or oranges (halved), onions (halved), fresh thyme or fresh rosemary, sage, and apples or pears (halved), celery, or carrots. Use any combination of fruits and vegggies with fresh herbs. Don't use anything like rice or stuffing because they can harbor bacteria and cause the cooking time to go up. Which can leave the turkey dry from over cooking. Target turkey temp should be 170 to 180 degrees F. Remember while the turkey rests the temp will continue to rise.

Fresh sage, wild rice and sauteed onions are great. Just a tip, never "stuff" a turkey. Make sure the stuffing is loosely packed, or it becomes a breeding ground for salmonella. Another safe guard is to temp test it, it should be around 160.
