Good afternoon. I would love to share a few recipes but am just home for lunch. However, this is a great website http://www.joyofbaking.com/ChristmasBaking.html

I have made the lemon cream cheese tart,rum balls and Hazelnut Ganache Cups... all have been a big hit so far at the deli I bake for.

Three "must bake" cookies are "Russian Teacakes", which are little nut balls coated with powdered sugar. Then there are the "Pinwheel" cookies, and the "Bell" cookies. I know the "Bell" cookies have another name, but I don't know what it is. They have a nut filling, with a cookie that is folded twice to make a triangle. Since only two parts of the cookie are folded over, you stick a half of a marchino cherry on the other third. That is the bell's "clapper". I've heard that it the "clapper" could be Jesus' head and I've had this cookie upside-down all of these years. Well, it's a good cookie either way! It gets really crunchy after a week, though. Good coffee dunker then.

I always make a variety of things, but I have two favorites. One are the pressed cookies - they sound generic, but my mom's recipe is soooooooo good, and they have a great almond taste. The other kind are called butterscotch twinkies, and they are amazing, it's kind of a family recipe, and a little complicated.

its not necessarily baking.....but my recipe is for peppermint bark

2 cups of chocolate chips
1 cup of white chocolate chips

melt both , seperately,
over double boiler or in microwave on 50% power stirring every 30 sec

to the white chocolate add 1 tsp of vegetable oil
and 1 tsp of peppermint extract

mix thoroughly

you can optionally add a few drops of green food coloring

line a baking sheet with parchment paper

spread the melted chocolate chips on sheet...it doesn't have to be perfect but thin it out to about 1/2 inch thick

then put the white chocolate on top of that in a few different spots....swirl with a knife

refrigerate for about an hour

take out and break up so it looks like tree bark

enjoy!

This year my son is turning 3 and we have recently started baking together. Lots of fun even if it is somewhat messy. So far we have made muffins, (banana chocolate chip are a favorite), cookies, rice krispie squares, pies and cakes.

For Christmas, he wants to bake cookies for Santa and we have plans to make tarts with Nana.

I'm debating if we should attempt to put together one of those gingerbread houses you can buy inthe premade kits.

I am making so much I will start baking right after Thanksgiving. I am making all the normal sugar cookies, applepie,pumpkin cheese cake, persimmion cookies, fudge. thats just some of the sweets not to mention all the appetizers, sides all the rest.

Let's see...this year's gingerbread project will be Santa's sleigh. I'll be filling it with petit fours and truffles that I'll be making. Also making a Buche de Noel complete with meringue mushrooms for garnish. Haven't decided on dessert for Christmas Day yet.
