ROAST BEEF TENDERLOIN WITH WASABI-GARLIC CREAM
Improv: Thai green curry paste would be great in place of the wasabi. Start with 1/2 teaspoon and add more to taste. Finish the sauce by stirring in a little chopped fresh cilantro.

> Preheat oven to 425°F.
To make Wasabi-Garlic Cream, combine in saucepan and cook over medium-high heat until reduced to 1 cup, stirring frequently, about 15 minutes:
1 1/2 cups heavy whipping cream
2 large garlic cloves, pressed
Whisk in and cook 1 minute:
1 tablespoon prepared wasabi
Remove sauce from heat. Season to taste with salt.
Place on rimmed baking sheet:
1 2 3/4- to 3-pound beef tenderloin, tied
Pour over beef and roll to coat:
2 tablespoons olive oil
Mix together and rub over top and sides (not bottom) of beef:
1 tablespoon kosher salt
1 tablespoon sugar
Roast until thermometer inserted into center registers 120°F for rare. Remove from oven; let rest 10 minutes. Sprinkle with salt and pepper. Remove strings. Reheat sauce over medium heat. Cut beef into thick slices; serve with sauce.
Makes 6 servings.

I love experimenting with recipes too.
