Neither. The only difference between raw and cooked is water content. So the nutritional value of the pasta is the same cooked or uncooked.

best pasta is al dente ,to the tooth, just about cooked through but still with a little hmm crunch you might say

It doesnt really matter. It takes a little longer to break down than cooked, but nothing serious. It probably has a worse affect on your teeth than anything else.
