Commonly known a Gum Arabic it is a tree resin found in the Middle East and South America, the resin is scaped like the way they extract the sap from the rubber tree.

After it is havested, it either dried or processed into a powder, it is a emulsifier and thicken used in ice cream, jams, fruit sauces, puddings and other processed foods.

It is a natural product and is available at cake decorating store, it is used in a decorating process called gum paste, a sugar based product that molds like marzipan and alot of wedding cakes that have elaborate flower displays are usually from gum paste.

It's a type of thickener, like guar gum. It is often used on low carb diets instead of something like corn starch because of the low carb count.
