I love the outdoors also, just turned 40 and don't mind getting my hands dirty. I would suggest a nice gift certificate if not for a massage or haircut, maybe to her favorite restaraunt. I would love something like that. Good Luck!!! I am sure she will love whatever you get her.

how about a nice day out just the 2 of you go for dinner have a nice chat and you could get her some earings or a braclet but just spending time with her i think she would really like that
