im trying to stick to low gi but could really do with some ideas

This is one of my favourites...

Get some cubed pork (or chicken if you prefer) peppers, mushrooms, brown rice, onion & stock.

Fry the onion & meat, then add the peppers and mushrooms. When they are soft add the brown rice and stock.

Simmer for about 25 minutes until it makes a delicious risotto.

It's very filling and low gi.

For snacks have plain popcorn or raw veg and houmous.

Grilled salmon, with boiled new potatoes and green vegetables

Stuffed peppers served with basmati rice

Crunchy vegetable pasta

2 low fat sausages with mashed potatoes
