Race horses are not ridden every day. Generally after a horse races or works out they will get 1-2 days off. On their days off the horses will usually be hand-walked in the morning and afternoon and taken out to graze. Some trainers use roundpens as small turnout areas as well.

you should ride the horse every day..it helps them digest their food better

That would depend on the trainer. They all have their own schedules.
