Salads are to taste, as in personal. For a good simple salad start with some regular lettuce and add some chopped endive or romaine to give it a little variety. Then add whatever additions you like: green pepper, onion, carrots, green or black olives, chique peas. All veggie there but folks also add a little cheese, boiled egg, bacon bits, etc. Then comes the dressing. For low calorie read the label of a store bought brand(not all low calorie). For some simple make your own take some lemon juice and olive oil about 1/3 and 2/3 and shake well with some chopped garlic and ginger in it. Pour on the salad and toss. You can also take some chopped garlic and ginger and add the juice of 3 limes. Then add enough honey to make it sweet enough to taste. Shake and let sit for a couple of hours and use to taste. If you are on a diet. Keep fat out of the salad as in meats and cheese. Add boiled eggs and leftover chicken in moderation.

Many of us use crudite platters for starters around the holidays. Substitute or add any combination of crudite to this simple salad.


1/2 pint cherry or grape tomatoes, halved
1 large red or green bell pepper, cut into bite-size chunks
1/2 red onion, chopped
1/2 European (seedless) cucumber, cut into bite-size chunks
2 ribs celery, cut into 1-inch pieces
1/2 yellow squash, cut into bite-size pieces
3 tablespoons to 1/4 cup extra-virgin olive oil, a couple of glugs
2 tablespoons (about 2 splashes) red wine vinegar
1 teaspoon sugar
1 teaspoon dried Italian seasoning
Coarse salt and pepper

Combine chopped vegetables in a medium bowl. Place oil, vinegar, sugar, and Italian seasoning in a small plastic container with a lid. Secure lid and shake dressing vigorously for 1 minute. Pour dressing over salad and toss. Season salad with salt and pepper, to taste

Marinate chicken stips in light done right(fraft) dressing and cook.Serve on salad with tomatoes,scallions,and cucumbers.

Cook shrimp and serve over romaine.

Add protein for a complete meal and choose whatver toppings you enjoy(banana peppers,mushrooms,radishes,cucumbers,peppers,olives) and a light dressings.
