milk, olive oil...? and for how long?

Pollo Loco Marinade

1 Lemon -- juiced
1 Orange -- juiced
2 Tablespoons White vinegar
2 Worcestershire sauce
1/2 Cup Chili sauce
2 Teaspoons Sugar
2 Teaspoons Garlic powder
Tabasco to taste
2 Tablespoons Oil

Just marinate the round steak in this mixture for 4-6 hours. Grill 20 minutes on each side.

Salt is a tenderizer, but you dont want to let your meat sit too long or it will get too salty. I have found that italian salad dressing works well as a marinade and tenderizer. Put the meat in a plastic bag with a zip top and marinate for 4-6 hours. Make sure you turn the bag over a few times and "press" the meat to get the seasoning all into it.
You can also use olive oil. garlic, salt, pepper and what ever seasonings you want, use the bag or a glass pan and marinate until ready to use.

Use either FRESH papaya juice or pineapple juice, 2 drops will do nicely, not too much or you meat will come out mushy!

Serioulsy, papaya juice is the most effective tenderiser, so if you got a baby you would like to wean into eating some really soft meat which you can mix into your rice or cereal, use the juice, on the meat.

Or the other way is to boil the meat first for around 1/2 hr. I did it for ribs before marinating them for a BBQ, the meat came off the bones and it was soo tender!

Try a salad dressing called Robust Italian.

Soak the steaks for several hours (if possible over night).

You'll have tender steaks plus a nice flavor to your liking.

1/2 cup salad oil
1/2 cup lime juice
1/2 cup chopped cilantro
2-3 tablespoons chopped garlic
fresh ground pepper
dash of salt

let marinate for a few hours in fridge grill
