Use a sharp sturdy knife to cut them in half while still frozen, it is easier and safer.

As long as the meat stays cold, thawing and refreezing it won't affect safety. However, thawing and refreezing can affect the quality of the meat in regards to texture. Since it's ground beef, this shouldn't be a big deal.

It's probably not the best idea, but I've been there, I've done it and I've not gotten sick. Thaw it in the fridge so as to prevent bacterial growth. Don't do it in the microwave because it always partially cooks it seems.

VERY BAD IDEA. When you defrost there is bacterial growth as the temperature optimizes.....when you freeze, defrost and refreeze you are super concentrating bacteria in the meat. It is esspecially bad for hamburger as there is some much surface area for the bacteria to grow on......think Ecoli and Samonella poisoning

Use a good serrated knife and cut them into smaller portions while still frozen rather than partially thawing and then refreezing.

well since you put it in yesterday, it shouldn't be that frozen. But the quick and safest way is get a hack saw and cut it into serving sizes. That way you won't have to worry about dethawing it. jsut make sure when you cuts them put them in freezer bags.

Go ahead. Don't thaw in the microwave tho...unless you watch it really close so it doesn't get cooked.

Once meat has been frozen and then thawed, it cannot be re-frozen. It spoils (I've tried this).
