No airline flies non stop to Spain from Texas. Depending on which airline you fly you'll need to connect. Here's some connecting service to Madrid:

Continential via Newark
American via Miami (*Chicago - Madrid is flown by Iberia*)
US Airways via Philadelphia
Delta via New York or Atlanta

If flying elsewhere in Spain you'll probably want to try a foreign airline like Iberia, British Airways, or Air France since they'll offer more service to other Spanish cities from their respective hub airports.
