Those are all wonderful combinations.
I'm a gold & wine person myself, but that would probably be too glittery for a wedding.
So I vote for the wine & champagne. Very elegant.

Not sure whether you are seeking new colour schemes to suggest to your cousin or if you want opinions on the ones she has chosen. The wine/ champagne combination is very nice and a little more subtle than wine and gold which are two strong colours that may conflict with each other.
Another nice combination she may consider is chocolate brown paired with ivory and some touches of gold.

I would go with the champagne or the gold or a mixture of the two. All three colors would look nice together and really bring a depth to the color pallate. Maybe have the Maid/Matron of Honor in gold and the rest of the bridal party in champagne then tie them all together with wine/gold and champagne colored accents. having wine colored or deep red roses in the flowers would also help bring the colors together especially if tied with ribbons of the other two colors.

They all sound pretty, but I would go with Wine/cream for a bigger color contrast. The only reason I would skip gold is because gold napkins usually end up looking too yellow instead of gold. The wine and champagne are too close of a color match for me. But it's her wedding, she should pick what makes her the happiest.

Wine/gold. It is the most related colors to fall because she is getting married in the fall and you can't have light colors such as wine/creme or champagne because they are to light. You want the most reasonable colors that will match with the fall season.

Wine/cream and wine/champagne go very well together...a lot of hollywood glamour can be done with those colors to make the reception a great affair!

If I were your cousin I'd chose wine/champagne because those two go together so well
