I like to use whole wheat flour. I use it for pancakes, to coat chicken strips and everything. Really good.
You can also find different kinds of wheat flours. Check out pretty much any grocery store for these.

I absolutely love Wheat Montana Prairie Gold flour. It is 100% whole wheat. Its a high protien flour and the texture bakes up pretty close to regular old white flour. Plus it's available at WalMart and other grocery stores and much less expensive than the health food store varieties. Their bronze chief flour is also really good but much more like traditional whole wheat.

Try kamut, rye, brown rice, spelt, or barley flour. ext. These can be found in some health food stores; Loblows' health food section. The best place to shop is at Bulkbarn. They have recipes of combination of different flours for baking.
